I don't much care for those big globe eggplants. I have tried to like them, truly I have, but I think it's a texture thing. They just taste squishy to me. If squishy is a taste. So this last week, Hank and I have been experimenting with globe eggplants, trying to see what we could come up with that we truly liked, given the challenges of this ingredient. We've had a couple in-the-trash-it-goes experiments, and a couple of hits as well.

This grilled eggplant burger or sandwich is one of those hits. I made it again for my parents today and even my dad liked it. He had two. And he doesn't like eggplant! The only reason he came over for lunch when he heard what I was serving was that mom was coming and he didn't want to be left at home alone.

1) Eligibility: NO PURCHASE OR ENTRY FEE IS NECESSARY TO ENTER OR WIN THE 2010 JAGER FOR LIFE SWEEPSTAKES (“Sweepstakes”). If a Winner decides to decline acceptance of the Grand Prize, an alternate Winner will be randomly chosen in the sole discretion of the Sponsor. The drawing will be conducted at a location to be determined in the sole discretion of the Sponsor. Odds of winning depend upon the number of eligible entries received. The Grand Prize (as defined in Section 4 below) is non-transferable and non-redeemable for cash, and may not be substituted except by Sponsor in its sole discretion. Subject to availability. Grand Prize will also consist of round trip coach airfare for one (1) from a U.S. airport to be chosen by Sponsor, depending on the residence of the Winner, to a location in the continental U.S. where the Grand Prize Winner will receive the Jager Tattoo (such location to based on Tattoo Artists availability and location and to be selected in the sole discretion of Sponsor), hotel accommodations (one room, single or double occupancy) for one (1) night in a hotel chosen by Sponsor, and ground transportation to and from the airport. All other expenses are the responsibility of Winner. Approximate retail value of each Grand Prize is $1,570. After each Winner is selected, each Winner will coordinate a date to travel to the location where they will receive the Jager Tattoo. Each Winner must receive the Jager Tattoo no later than June 30, 2011, unless such date is extended in the sole discretion of the Sponsor. Beverage alcohol is not included in any prize. Prizes are non-transferable and non-redeemable for cash, and may not be substituted except by Sponsor in its sole discretion.
5) General Conditions: All federal, state and local laws and regulations are applicable. All taxes and fees, if any, are the sole responsibility of Winner. Entry and/or acceptance of Grand Prize constitutes permission for the Sponsor and their agencies to use the Winner's name, address (city and state only) and/or likeness for advertising and trade purposes without further compensation, worldwide and in perpetuity, in any and all forms of media, now known and hereafter devised, including without limitation on-line, unless prohibited by law. The Winner will be required to execute an Affidavit of Eligibility, a Liability Release and a Publicity Release ("Affidavit/Release") which must be returned within the time period specified by Sponsor. Non-compliance will result in disqualification. The Affidavit/Release will contain an acknowledgement by Winner that the Grand Prize awarded, as with any tattoo, may be dangerous and that personal injury, including death, may result from acceptance of the Grand Prize and a full release of all parties as more fully described in Section 7 below. Failure to sign and return the Affidavit/Release or to comply with any term or condition of these Official Rules may result in a Winner’s disqualification, the forfeiture of his or her interest in the prize, and the award of the prize to a substitute winner. Persons traveling as guest of the Winner, if any, must be twenty-one (21) years of age or older and must also sign any affidavit or release that Sponsor may require. Return of Affidavit/Release as undeliverable may result in disqualification. All entrants agree to comply with these Official Rules. All interpretations of these Official Rules and decisions by Sponsor are final. Any attempt by a person to deliberately undermine the legitimate operation of this Sweepstakes is a violation of criminal and civil laws and should such an attempt be made, Sponsor reserves the right to seek damages from any such person to the fullest extent permitted by law.
